Veg. Calzone

Ingredients:

serves 4
500 grams of all purpose flour and extra for dusting 
1 sachet of easy blend dried yeast
1 tsp salt
300 ml Luke warm water
1 tbl spn olive oil 

to make filling :
1 cup well cooked soya chunks
1 red onion chopped
1 garlic clove crushed 
3 tomatoes ripe
3 tbl spn tomato puree
2 tbsp mixed herbs
200 gms mozzarella 
salt and pepper according to taste

About:
 sift flour into a bowl , stir in the yeast and salt 
mix well from the center adding water and oil kneading into a soft dough.
on a flat surface continue kneading for about 10 minutes till its smooth.
place in a bowl cover and leave it till it doubles in size or for 1 hour .

to make filling:

in a pan heat oil ,add onion and garlic  and fry gently 
then add chopped tomatoes  and allow to simmer ..keep stirring  
remove from heat once the mixture has become slightly dry now add the puree ,herbs ,salt and pepper


preheat oven to 220c 

remove the covered dough and cut it up into 4 equal parts  and roll them out into 6-8 inch round shape.
fill the middle with the filling and  place a little  mozzarella on top .
on the edges brush a little bit of water which helps to enclose and seal the calzone ..which is now ready to be put on the baking tray 
cook for about 20-25 minutes till golden brown and serve warm
