Bread Upma

WHEN I RECOMMEND BREAD FOR BREAKFAST, MY CHILDREN COMPLAIN, "I'M TIRED OF EATING ONLY TOAST AND WANT SOMETHING DIFFERENT."

WHEN WE THINK OF UPMA, WE THINK OF RAVA, BUT REPLACING BREAD WITH RAVA AND USING THE SAME TEMPERING METHOD MAKES A HUGE DIFFERENCE.

IT CAN BE HAD ALONE WITH A HOT GLASS OF MASALA CHAI, WITHOUT A CHUTNEY OR SAMBAR AS AN ACCOMPANIMENT.

TO MAKE IT MORE FLAVORFUL, MY MOTHER USED TO ADD CURRY POWDER.

MY FAMILY'S FAVORITE GO-TO WHEN SEARCHING FOR NEW BREAKFAST IDEAS IS BREAD UPMA. SIMPLE BUT DELICIOUS SPICY BREAKFAST THAT TAKES LESS THAN 15 MINUTES TO PREPARE.

INGREDIENTS:

  • 10 slices soft fresh bread
  • 2 onions finely chopped
  • 2 tomatoes finely chopped
  • 1 capsicum finely chopped
  • 2 green chilies finely chopped
  • 1/2 inch ginger grated
  • few curry leaves
  • coriander leaves to garnish
  • 1 tsp turmeric powder
  • 1 lemon
  • 1/4 cup water

   To temper:
        4 tsp oil
        1 tsp mustard seeds
        2 tsp Bengal gram dal
        1 tsp Urad Dal

   METHOD:

  • Cut the bread slices into cubes and keep aside.
  • Heat the oil in the pan. When the oil is hot, add the mustard seeds
  • Once the mustard seeds start to sputter add the urad dal, Bengal gram dal.
  • Add onions, ginger and green chili. Sauté till onions sweat and turn translucent.
  • Now add the tomatoes and sauté till they turn completely mushy.
  •  To this add the capsicum.
  • Once all the vegetables are cooked add curry powder and salt.
  • Mix  the bread piece gently without breaking them.
  • Sprinkle water mixed with turmeric on top of the bread pieces.
  •  Cover and simmer for 2-3 minutes, making sure the bread absorbs masala.
  • Squeeze the lemon juice on top of the upma and gently toss.
  • Garnish with coriander and curry leaves .
  • Transfer into a serving bowl. Enjoy

Tip.

  • Do not over cook and make sure to retain the crunchiness of capsicum
  • Mix turmeric to water and sprinkle on top of the bread to keep the bread soft
  • Turn off the stove cook once the lemon juice is squeezed in.
